Do not overmix muffin batter! It can cause your muffins to be tough, bake into irregular shapes, and create large holes throughout the muffins. Mix only until the dry ingredients are moist – the batter will still be lumpy and that’s OK.

Lightly spray cupcake liners with non-stick spray to keep your muffins from sticking to the liner when peeled off.

Does fruit sink to the bottom of your muffins? Toss the fruit with a little flour to coat before folding the fruit into the batter.

To store, keep muffins in an air tight container. Put them in the freezer for long-term storage. Wrap them in a few layers of plastic wrap or put them in a freezer bag and remove as much air as possible before placing in the freezer. If you have a vacuum sealer, this would be a great time to use it!
